It’s true. Not only does fat taste delicious, but the right fats are crucial for many important functions in the body (not only is fat a back up energy source, and critical for absorbing certain nutrients, but it also helps regulate your body temperature!)
Five centuries ago, to “live off the fat of the land” meant to enjoy the best of something. People worked pretty damned hard to feed themselves and their families. At 9 calories a gram (the calorie dense of the three macronutrients) fats were highly prized!

What happened to poor fat?
Bad science. Political lobbying. The modern industrial agricultural complex.

It is tough though. After a lifetime of dieting, to be able to enjoy, indulge, and incorporate healthy fats into my food has been tough. Delicious, but I needed to get through the mental block first. What do I use at home? Butter or ghee, coconut oil, olive oil, avocado oil, tallow, lard, and sesame oil (Palm oil is technically a traditional food, but it is complicated by bad practice, and farming that destroys animal habitats. I figure there are enough other fats that I do not need to partake of palm.)
